I’ve been eating a mostly grain free diet for a while now.  From time to time I eat some gluten free grains (California Rolls anyone?) but for the most part I haven’t.  I’ve noticed my body just does better lately without them and for now I’m going to keep running with that.

I really enjoy trying out new ingredients and coconut flour has been 1 thing that I’ve done more baking with lately.  Coconut flour is really high in protein, healthy fats, it’s naturally gluten and grain free and it has a more moderate affect on your blood sugar than grain based flours.

I’ve recently modified my German Pancake recipe to be grain free by using coconut flour and this last weekend I was playing around with waffles and settled on a nice recipe.

If you’re looking to play around with new flours, or you need to go gluten and grain free for health reasons then this could be a great alternative for you!

To make these waffles dairy free sub coconut oil for butter and sub coconut milk for cows milk.

    Is grain free the same as wheat free? Thank you. My sister is on a wheat/ gluten free diet due to allergies. I thought your waffle recipe might be good for her. Thank you.

    1. Yes it is! Gluten free could mean there are other non gluten grain flours like rice flour. Grain free is generally coconut flour and almond flour. No grains at all and definitely safe for those who are gluten free.
