Roasted Red Pepper Hummus and My Favorite Lunch

Here is one of my favorite hummus recipes.  I really love the flavor of roasted red peppers and combined in hummus, it’s a great combo.  I mainly use it as a spread for sandwiches but it’s also yummy to use as a dip with vegetables, crackers and chips.  It’s a great thing to have on hand in your fridge.  This time I didn’t boil my own garbanzo beans.  I was walking through the grocery store, around lunchtime (bad idea) and I spotted some hummus and decided to make up a batch of my own so I just bought some canned organic garbanzo beans because I didn’t want to wait 3 hours!  I just mix it up in my Vitamix blender and it works great.

So, my go-to lunch right now is a hummus and veggie sandwich.  So yummy!  It’s vegetarian if that is what you’re into and you can make it vegan if you just leave out the cheese and the hummus itself is gluten free.

I don’t make my own bread right now.  I have in the passed but have not found “the” recipe and I don’t have a fancy mixer which would make it easier.  One of my favorite breads to buy is Dave’s Killer Bread which is sold in a few stores around me including Costco, so that’s nice.  I’ve been buying similar bread through a food co-op for a bit cheaper.  I like a bread that has multiple whole grains in it to give my family and I a bit of variety than just plain old wheat.

Just slather the bread of your choice in this yummy hummus then layer it up with any washed and sliced veggies that you have on hand.  I used baby spinach, cucumbers, tomatoes and a slice of provolone cheese sprinkled with salt…yum.  It’s fun to add sprouts if you have some and peppers are another one of my favorites.

Garbanzo beans are a great source of fiber which is essential in keeping your stomach and bowels working good, protein to keep your energy up, potassium which is good for your heart, kidneys and renal system, and Thiamin (B1) which is important for the health of your brain and nervous system.  Here’s to hummus!

      Thanks Katie! It’s a good lunch because it doesn’t leave you feeling all weighed down and yucky, like you just ate your kids leftover cold mac and cheese 😉
