Lemon Coconut Kefir Smoothie

This summer we were able to head up to Canada to spend a week on a beautiful lake with lots of family. Over the course of the week I ate a lot of garbage, stayed up too late and was a bit relieved to come home to a schedule and a healthier eating routine!

Not to mention on the way up there my Vitamix fell and broke!  Luckily Vitamix is an amazing company and they sent out a new canister.  Phew!  In the meantime I’m borrowing my mother-in-laws and I whipped up this tropical concoction and it is delicious.

I never tire of finding new ways to consume kefir.  Once I go without kefir for a few days I notice that my body doesn’t feel as good.  I’ve struggled with poor equilibrium for years and it seems the more probiotic fermented foods I eat the better I feel, when I go without, balance issues return.  Weird, I know, but I’ve seen this pattern time and time again.

Onto the recipe!

I’ve added a couple tablespoons of coconut oil in there for healthy fats.  Fat, especially first thing in the morning, really helps to fill you up, and stabilize your blood sugar and it’s also good for your nervous system.  If you are stressed or have anxiety then load up on healthy fats to soothe your nerves.

This recipe has some yummy tropical fruits as well as a bit of lemon, with the rind on that really makes this smoothie taste yummy and bright.  You could easily add a handful of kale to boost this smoothie even more.
