On Sunday I realized I didn’t have any kefir to make my usual morning smoothie so I had to improvise a bit.  We did have plain yogurt and some other goodies so I decided to make myself a yogurt parfait.

The kids also got on board and started concocting their own parfait combinations with coconut, homemade granola, frozen fruit and greek yogurt.

I opted for plain (full fat) yogurt as I’m leading a sugar free challenge for the year.  The parfait was actually pretty enjoyable despite the less than sweet flavor my taste buds are used to.  Adding banana is a definite must to help incorporate a nice sweet-ish flavor.  The nuts also provide a nice crunch (similar to granola) as well as some extra protein which makes this little breakfast/snack more satisfying.

One thing I’ve learned is that when you eliminate sugar from your diet you need to make sure that you get ample fat and protein.  Many people complain of feeling hungry or unsatisfied without sugary foods, eating enough protein and fat will definitely help combat that!

If you’re not avoiding sugar I still recommend buying full fat plain yogurt and adding maple syrup, honey or homemade jam to sweeten it.

You can get as creative as you’d like with these little layered treats.  They look really pretty in all types of glass cups.  Layer yogurt, any fruit (frozen or fresh), nuts, granola, coconut, seeds and more!  Kids love this activity and it’s great to get them involved in what they eat.
