These little dandies are my favorite homemade cracker so far. They are delicious!!! They actually do taste a lot like a real wheat thin which I used to buy all the time. One of the hardest things about switching to unprocessed foods is the snacking. When you are hungry and in a pinch you need something fast, and that is usually when you make a snap decision and eat something junky. Sometimes I don’t want to grab a piece of fruit or a handful of nuts, I want something crunchy and salty and these are just the snack to grab when you’re feeling like that!
When I first saw vanilla in these I thought it was a bit weird but it actually provides a nice little flavor. They have a hint of sweetness without being too sweet and are great with sliced cheese. Yum! I usually double or triple these so they last a few days. I got the little glass container at Walmart and just leave it on the counter for easy snacking. This recipe is originally from the King Arthur Flour Whole Grain Baking Cookbook.
