These energy bars are one of my favorite snacks.  Instead of an oat-based “granola” bar they are made of nuts and seeds.  They are versatile, in that you can add any nuts and seeds that you have on hand and they don’t contain any refined sugar, which is a plus. Originally the recipe called for Chia seeds but my husband didn’t like them so I subbed sesame seeds and it worked out great.

They are gluten free and dairy free. The combination of peanut butter, honey and maple syrup simmers to create a yummy caramel-like mixture that binds the ingredients together without the need of baking.

I use a bench scraper (pictured below) to press the mixture into a 7 1/2” x 11” (2.2 quart) Pyrex baking dish lined with wax paper. Once they have a chance to cool and set up I lift the wax paper from the dish and cut them into bars.  I then wrapped them with plastic wrap and stored them in a glass storage container.  I’m sure there are more “eco-friendly” ways to store the bars than wrapping each one with plastic wrap but I wanted them to be portable and easy to grab when I’m in a rush.
