Strawberries & Cream Smoothie | http://www.wholesimplelife.com #smoothie #strawberries #probiotic #datesweetenedThis strawberries and cream smoothie doesn’t seem to be the most fitting thing to be sipping on right now.  The wind is blowing outside while the snow falls down and I’m tucked inside my small apartment with a scarf wrapped around my neck while my youngest is napping.  I should be sipping on some hot soup. But, lately I have been on a roll with this yummy smoothie and have had one almost every day for the last few weeks.  I actually used the last of my strawberries today. This is a filling and yummy drink that is great for breakfast, snack a or a sweet treat at the end of the day.  There is absolutely no sugar except the 2 dates that I use to sweeten it, and sometimes even that seems a bit sweet.

I’ve used milk, coconut milk, cows milk kefir and coconut milk kefir as the base for this recipe and it turns out great each time.  I’ve really been trying to drink 1 c. of kefir a day for it’s probiotic benefits and this is usually how I get that.  I buy medjool dates at Costco, they are nice and soft and blend up perfectly.  I also add a tablespoon of chia seeds and a tablespoon of coconut oil in here to get some healthy fats as well.  This recipe is very flexible and you can use whatever fruit you’d like. 

Strawberries & Cream Smoothie (date sweetened)

1 c. milk/kefir (coconut or cow’s milk)

1 c. frozen fruit

2 Medjool dates, pitted

1 T. chia seeds (I used this brand)

1 T. coconut oil (I use this brand)

Directions:

Place all ingredients in blender, my favorite is the Vitamix and you can check it out here, blend on high until well blended.
