Slow Cooker Chicken Curry
This recipe for simple slow cooker chicken curry is from Ali and Tom at Nourishing Meals. I’ll have to say that every recipe I have tried from their website has been awesome. This recipe is super simple, you can start it around lunchtime and by dinner you have a wonderful chicken curry in your slow cooker that smells amazing.
This Chicken Curry tastes great over rice, quinoa or even mashed potatoes. I have another more complicated chicken curry recipe that I make in a skillet but I can’t help but turn to this recipe time after time because it’s so easy and quick to throw together.
Slow Cooker Chicken Curry
1 medium onion chopped
2 boneless skinless chicken breasts cubed
4 large carrots cut into thick slices
2 Roma tomatoes chopped
1 can coconut milk (like this brand)
1/2 c. water or homemade broth
1 heaping tablespoon curry powder (I like this brand)
2 t. salt (like this brand)
1 c. fresh or frozen peas
chopped cilantro for garnish if desired
Directions:
Place all ingredients except peas into slow cooker, stir. Set to low for 8 hours (starting at breakfast) or high for 4 (start at lunchtime). When you go to cook your rice or whatever you’d like to serve the curry over, add the frozen peas and stir. Serve with fresh salad. Makes wonderful leftovers.

What a great recipe! We all like chicken curry and was looking for a simple, no fuss one …this certainly has become a hit and a go to meal when I need it. So nice not to go out for curry any more …. I can control the quality of the ingredients, yeah!
