It’s not secret that my most used kitchen appliance is my Vitamix blender.  I use it more than my stove. There are endless possibilities for uses.  Hummus, green smoothies, salad dressings, pancakes, coconut milk and so much more. My kids love to concoct special treats for a mid afternoon snack and the other day my son requested strawberry, banana, blueberry, mango “ice cream.”   I couldn’t argue with a healthy snack request, I whipped it up and boy did it taste good.  I usually add just a bit of liquid to get it going in the blender, this time I used a bit of kefir, but you could use, juice, homemade coconut milk, cow’s milk or water.

There’s not really much of a recipe here, just add 1 frozen banana and 1 1/2 c. frozen fruit of your choice.  You can’t mess it up if you tried, the combinations are limitless, have fun with it and let me know what concoctions you come up with in the comments below.

Fruit Smoothie

1 frozen banana

1/2 c. frozen blueberries

1/2 c. frozen strawberries

1/2 c. frozen mangoes

Splash of liquid of choice

Blend and enjoy!

    This sounds really delicious . . . just wish I could still eat bananas. :/ Do you have any possible recommendations for what might work as a good substitute for the bananas? Thanks!

    1. Hmmmm, I would try the thick coconut cream from a can of coconut milk and some extra mangoes. Mangoes are nice and sweet just like bananas and blend up nice and creamy. Good luck!
