Making a wholesome breakfast is a tricky task sometimes.  My goal has been to reduce cereal as much as possible since it is often loaded with sugar, empty calories and preservatives.

Generally cereal is reserved as a “treat” for the weekends but during busy seasons of life it can be really convenient.  You can find healthier cereal by  paying attention to labels.  If you can pronounce it and it has less than 10 ingredients then you’re doing alright.

I really try hard to make breakfast a healthy meal and this is one of my go to recipes. I throw all of the ingredients into my Vitamix blender but any blender will work.  Pour the batter straight from your blender onto a warmed waffle iron brushed with coconut oil.

Serve with butter and real maple syrup on top with a side of fresh fruit.  Yum!
