Broccoli and Potato Cheese Soup (with nourishing chicken stock)

This soup is so divine.  I love soup so much I could eat it all winter long.  About every other week I prepare a big batch of soup, that I end up eating for days and I love it.  This Homemade Broccoli and Potato Cheese Soup is sort of a mash up of a few recipes I’ve made over the years. This soup is flavorful, healthy, and satisfying.  I use homemade chicken stock which really adds depth of flavor and nutrition to this soup.

Broccoli and Potato Cheese Soup (with nourishing chicken stock)

3 T. butter

1 medium onion diced

1 c. shredded carrots

1 1/2 c. red potatoes diced small

1 bunch fresh broccoli

3 c. homemade chicken stock

1 bay leaf

1/2 t. garlic powder (I like this brand) or you can use 2 cloves fresh garlic grated

1/4 t. basil

1/2 t. salt (I like this brand)

1 c. cream

1 c. shredded cheddar cheese, or gouda, or really whatever cheese with a nice flavor that you like.

Directions:

1. Melt butter in large sauce pan/soup pot and add chopped onions and garlic cook 5 minutes.

2. Add carrots and potatoes cook another 5 minutes.

3. Add broccoli and broth and seasonings.

4. Let simmer about 20 minutes.

5. Once everything is tender, remove from heat and let cool a little bit, then place half of the soup in your blender and blend on a low setting. Place blended soup back into pot.

6. Add shredded cheese and cream and stir until melted and well mixed.  Serve with fresh salad and bread. Enjoy!
