Mmmmmm these turkey and cheese roll ups are delicious.  Actually, I’m munching on one right now… kind of messy at the computer!

I’ve been looking for ways to mix up my lunch routine and diverge a bit from the usual salad.

I’m grateful that our grocery store offers a high quality brand of lunch meat (Columbus Brand) without lots of msg, preservatives and other bad stuff. I bought some the other day because my daughter loves a good turkey sandwich.  Avocados were also on sale, and surprisingly not over-ripe so I grabbed a couple of those too. At home we had a bit of sliced swiss cheese and some cucumbers and red pepper and voila, a new lunch was born.

It’s a bit like a sushi roll…of sorts… use whatever meat and cheese you’d like for the outside portion and fill it with thin slices of your favorite veggies.

I was going to spread some hummus on the inside of the roll but after spending 15 minutes walking aimlessly around the grocery store trying to figure out what the heck I still needed to buy, I finally remembered I needed garbanzo beans once I was driving out of the parking lot.

Does that ever happen to you?

If you’re off grains for the time being, like myself, or just looking to spice up lunch or cut some carbs this is a great little lunch to whip up.
