Sweet Potato & Thyme Chicken Soup | https://www.hannahhepworth.com #chickensoupforthesoul #realfood #healthy #soupJust last week I was sick with a nasty cold.  I actually spent an entire day in bed, no makeup, jammies on, the works!  There’s nothing that drives me more crazy than spending an entire day sick and unproductive. But, I’ve realized that sometimes you have to be kind to yourself and allow yourself to just rest and recuperate, and that’s just what I did.

One of the best things you can do for yourself when you feel yourself getting sick or already have a full fledged cold is whip up a batch of homemade chicken soup.  You can include noodles, rice, or no starch and lots of veggies, which is what I did.

It just so happened that the fridge was pretty bare too so I did a bit of improvising. I think some of the best things happen when you have to use your imagination and because of that…this recipe was born!

This soup is really flavorful. My mother in law (who lives upstairs) had some fresh thyme she donated which made a wonderful addition to the sweet potatoes used instead of regular potatoes.

I had a huge box of spinach and when you slice it up thin it really works well in any number of recipes because it cooks down so small you barely notice it.

I used my own homemade chicken stock that I make every time I make roast chicken.  I purposefully roast at least 1 chicken a month (especially in the colder months) so I can make stock and always have it on hand in the freezer.

It’s easy and it makes your house smell wonderful…it also tricks your husband into thinking you’re cooking something really yummy for dinner…until he realizes it’s just a floating chicken carcass in a crock pot…:)

So here is my very own homemade chicken soup recipe.  You can take your own freedoms and incorporate any of your favorite veggies.

Notice I used 10 garlic cloves…yes 10, hey when you have a cold garlic is a GREAT thing to help kick it!

      It makes a big pot, it’s got a half gallon of broth plus a ton of veggies and chicken, we ate it for days and we are a family of 5. How big is your family? I would say you will get 10 servings or so:)
