Guacamole-The Perfect Party Snack

Guacamole is one of those snacks that is a major crowd pleaser.  If only we could grow avocado trees in my part of the country!  I always have avocados on hand to chop up and add to salads, to top chili or a baked potato.  They also add a great creamy smooth consistency to smoothies without adding a strong flavor.

Health Benefits of Avocados

Avocados are rich in monounsaturated fat (good fat) which is easily burned for energy.  Avocados have more than twice the amount of potassium as contained in 1 banana.  Avocados contain fiber, vitamin E, B-vitamins, folic acid and anti-inflammatory properties.  They are one of the best conventionally grown fruits to purchase because of their thick skin pesticides are unable to leech into the fruit.  If you are tempted to buy organic avocados don’t, save your money to spend on some other produce that has more chemicals on it!  It’s amazing when you start researching a specific fruit or vegetable to learn just how much is packed into it.  A couple years ago when I purchased my Vitamix blender it came with the book The Wisdom and Healing Power of Whole Foods, which goes into great detail about a great majority of fruits and vegetables and it is pretty eye opening to see how amazing they all are and that they contain way more benefits than I ever thought about.

This guacamole is really quick to whip up.  I came up with this recipe one day when I had some avocados on hand that were prime for eating. You better take advantage of them because they can turn on you pretty quick.  I kept adding my desired flavors until I got the perfect balance.  Lime juice is a must, I love the fresh bright taste it brings to the creamy avocados.  I don’t add any jalapeno peppers because I’m not into spicy foods but if you need a bit of a kick then you can add some.  I like to eat this dip with chips of course, but I try and get some extra veggies in me by using carrot and cucumber sticks as dippers too.  They’re really all just a vehicle to get the guacamole in your mouth anyways, you could just cut to the chase and eat it with a spoon.  This simple guacamole is also a great topper for chili, baked potatoes, quesadillas and tacos.

Simple Guacamole

2 ripe avocados

1 cloves garlic grated

1 tomato chopped

1 green onion sliced thin (white and green parts)

Juice of 1/2 a lime

Salt & Pepper to taste

Directions:

Place all ingredients in a bowl and mash together with a fork.  Serve with your choice of chips and sliced veggies.
