I was thumbing through my breakfast recipes the other morning as the kids were getting ready for school and came across a recipe that I had marked as “yummy.”

The original recipe called for applesauce, and since I don’t always have that on hand I decided to substitute with some probiotic (Nancy’s Brand) sour cream.  Sour cream gives pancakes a nice rich, moist texture. Plus the probiotics in the sour cream add some additional gut health enhancing benefits.

If you don’t have access to probiotic sour cream you can use kefir or make kefir cheese by straining a half cup of kefir with a coffee filter placed in a fine mesh strainer set over a bowl.  The whey will drip out and you will be left with “kefir cheese” which is a sour cream like in texture.

I also added some chia seeds which really help bind the pancake batter together and they will give your kids a small dose of omega-3’s as well.

Wherever I can sneak in some extra nutrients I do it, because like I’ve mentioned before, my kids are a bit picky!

Be aware that this recipe does make a lot of batter. If the amount of sugar is a bit too much for you, you can half it easily. I love that it makes so much because I store the extra batter in the fridge for the following morning, or just cook up all the pancakes and keep them in the fridge or freezer and the kids can heat them up in the toaster.
