I’ve been on a grain free diet for a few months now, and am loving the way I feel.  I personally do much better on a higher protein diet.  It helps balance my blood sugar which also helps to keep anxiety at bay, and it helps me feel full and energized.

I’ve been playing around a lot with coconut flour by making coconut flour german pancakes and coconut flour waffles, which I will indulge in from time to time.  Lately I’ve been making a new banana bread recipe that I love so much!  I don’t even miss the regular wheat flour version.

Coconut flour is one of the less expensive specialty flours to bake with.  You can buy large bags at stores like Costco for under 8 dollars and recipes generally don’t call for much coconut flour because it is very absorbent.  There are usually a lot of eggs called for in a recipe to help bind everything together.

Baked goods that use coconut flour generally have a more spongy consistency, rather than a chewy gluten type texture of wheat flour.  My kids don’t even notice the difference between the old whole wheat german pancakes and the new coconut flour version.
