This grain free chicken soup really did the trick about 6 weeks ago when I had the flu.  It completely laid me out for 2 days which at that time was the end of the school year and beginning of summer, and well, anytime you get sick with kids it’s a trial!

It’s hard when mom can barely get up and move.  I hadn’t been this sick with a stomach bug since I was pregnant with my first, 8 years ago, and no I am not pregnant.  It makes me grateful that I generally don’t catch my kid’s flu bugs.

At 2:00 a.m. in the morning while I was keeled over the toilet the thought running through my head was no, no no!!!  This isn’t good timing, I haven’t gone to the grocery store in ages and we have no food!  Sad huh?

The next day I had to get really creative.  Luckily the night before my mother in law had brought me down a cup of homemade soup that was so simple and delicious.  That night the soup didn’t really sit well with me but the next day I was craving more, oddly enough.

I had all the ingredients and decided to make some up.  Of course I ended up resting periodically in between chopping and sautéing because I was THAT weak!

The finished product was divine.

Remember how I said we had no food?  Well that included a freezer staple of mine of chicken broth.  But, the way you make this soup, you don’t even need to use any of that liquid gold.  You make your own up right as you make the soup.  Lovely.
