One of my husband and my favorite take-out items is curry.  This authentic thai curry recipe rivals that of our local Thai restaurant.  The coconut milk, the yellow curry, the veggies, the chicken, the flavors are just, oh my goodness, DIVINE!

I could really make this weekly and be happy, but I don’t want to overdo a good think, you know?

I’ve been working for years tweaking this recipe to get it just so.  I don’t even remember where I got the original recipe but the one I make today is far from it.  This literally tastes even better than the restaurant version.  It’s so nice to be able to finally make it at home.

You can switch it up by adding whatever veggies or meat you want.  You could even do a vegan version with all veggies and add some beans in there.  Yum!  It’s dairy free too, and gluten free and you can just eat the curry sauce and veggies and protein without the rice and you’ve got a grain free, paleo meal! It couldn’t be more perfect.

There you go!  You’ve got one of my all time favorite recipes.  No more heading to the Thai restaurant for take out.  The simmering time isn’t real specific.  I kind of just simmer and taste and simmer and taste the whole time.  I add more salt if I think it needs it, add more sugar if you want more sweetness and more lime juice if you need more tang.  You just need to experiment a bit to find your perfect balance of flavors.

  1. Mmmm, this looks great! The only time I’ve attempted Thai curry is when I tried to copy a massaman chicken recipe so good it brought me to tears lol. Mine wasn’t as good as that one, but it was better than nothing 🙂 I am printing this out for my “Recipes to Try” notebook – I’ll be sure to report back after I’ve made it! 🙂
